Winter is upon us and warm comfort food is definitely on the menu. This dahl recipe is nutritious, high in protein and iron, and easy to make.

Ingredients:

  • 1 tablespoon olive oil (or oil of your choice)
  • 1 large onion
  • 5 cloves garlic, minced
  • 1 tablespoon fresh ginger, finely chopped or minced
  • 1 tablespoon Garam Masala
  • 1 teaspoon turmeric
  • ½ teaspoon dried red pepper flakes or chilli (more if you like it hot)
  • 1 ½ cups dried red lentils
  • 1 can tomatoes
  • 1 can coconut milk
  • 3 cups vegetable stock
  • Juice from ½ lemon
  • ¾ cup baby spinach

Method:

Sauté the onion in the olive oil on medium heat until soft.

Add the garlic and ginger and fry until softened.

Add Garam Masala, turmeric and red pepper flakes.

Stir in dried lentils, tomatoes, coconut milk and vegetable stock.

Bring to the boil, lower the heat and simmer until lentils are soft and tender.

Stir in lemon juice and spinach.

Cook until the spinach is wilted.

Serve with rice or naan bread.
